  1. Halve squash and remove seeds. Drizzle with olive oil, salt & pepper. Roast at 400 degrees F (cut side down) on baking sheet for 40-50 minutes, until golden and soft.

  2. Prepare quinoa according to package. (Boil water, add quinoa, cover and simmer on low until water is absorbed.)

  3. Saute onion and garlic, and mix in with prepared quinoa. Mix in cranberries and pumpkin seeds, to taste.

  4. Remove squash from oven, fill with quinoa mixture. Top with Parmesan if desired. Eat. Love.
