Peel potatoes, slice 1/4" thick lengthwise, and brush lightly with olive oil.
Place on foil-lined baking sheet, and roast at 400 degrees F for 30-45 minutes until golden and slightly crunchy.
Top with toppings of choice! Our favorites: banana and peanut butter, cream cheese with blueberries and almonds, and cream cheese with pears and honey. Eat. Love.
