About the Recipe
Ingredients
1/3 cup peanut butter (or nut butter of your choice)
3 tbsp rice vinegar
1 juice Lime
4 tbsp olive oil
2 tbsp soy sauce
2 tbsp Honey
1 clove garlic
1 tbsp Fresh ginger (chopped)
1 tsp Salt
2 tbsp fresh cilantro leaves
1 1/2 cups chicken (cooked & shredded)
2 cups cabbage (shredded)
2 cups Kale (chopped)
2 Carrots (chopped)
1 Cucumber (chopped)
1 red pepper (chopped)
2 green onions (chopped)
1/4 cup peanuts (or other nut, for garnish)
Preparation
For Dressing: combine first 10 ingredients (through cilantro) in a blender or food processor and pulse until smooth and creamy.
For Salad: combine remaining ingredients in a bowl. Toss with dressing right before serving. Garnish with peanuts and fresh cilantro. Eat. Love.
