Thai Kale Salad with Peanut Dressing

About the Recipe

Ingredients

  1. 1/3 cup peanut butter (or nut butter of your choice)

  2. 3 tbsp rice vinegar

  3. 1 juice Lime

  4. 4 tbsp olive oil

  5. 2 tbsp soy sauce

  6. 2 tbsp Honey

  7. 1 clove garlic

  8. 1 tbsp Fresh ginger (chopped)

  9. 1 tsp Salt

  10. 2 tbsp fresh cilantro leaves

  11. 1 1/2 cups chicken (cooked & shredded)

  12. 2 cups cabbage (shredded)

  13. 2 cups Kale (chopped)

  14. 2 Carrots (chopped)

  15. 1 Cucumber (chopped)

  16. 1 red pepper (chopped)

  17. 2 green onions (chopped)

  18. 1/4 cup peanuts (or other nut, for garnish)

Preparation

  1. For Dressing:  combine first 10 ingredients (through cilantro) in a blender or food processor and pulse until smooth and creamy.

  2. For Salad:  combine remaining ingredients in a bowl.  Toss with dressing right before serving.  Garnish with peanuts and fresh cilantro.  Eat.  Love.
