Ingredients


  1. 6 medium Tomatoes

  2. 1/2 cup Fresh basil

  3. 1 clove Fresh garlic

  4. 1/3 cup apple cider vinegar

  5. 2 tbsp olive oil

  6. 1 tsp soy sauce

  7. 1 yellow or orange pepper, finely chopped

  8. 1 cup corn kernels fresh off the cob

  9. 1 apple, finely chopped

  10. 1/4 jicama, finely chopped (optional)

Servings: servings

Instructions


Puree first six ingredients (through soy sauce) in a blender or food processor. Mix in chopped veggies. Chill. Top with fresh basil and serve cold. Eat. Love.
